Cold Pasteurization

What is Pasteurization?
Pasteurization is the process whereby undesirable food-borne organisms are killed, making the food / liquid safe to consume. This is normally done by heating the food or liquid to a specific temperature for a period of time. Irradiation (subjecting food / liquid to gamma rays) is also another form of pasteurization, as the gamma rays will also kill the microorganisms.


What makes ‘cold pasteurization’ different?
Garden Gate Farms has incorporated a form of cold-water pasteurization into its juice manufacturing process that is just as effective in killing unwanted microorganisms as the traditional form of heat pasteurization. Garden Gate Farms now high pressure pasteurizes the wheatgrass juice and broccoli sprout juice to enhance its food safety program and lengthen the shelf life of both products.

Why is this important to you, our consumer?
The advantages of high pressure pasteurization with cold water are numerous.

  • Juice remains cold during the pasteurization process so enzymes remain active (alive). Normal heat pasteurization deactivates (kills) the naturally occurring enzymes found in both juices.
  • The high pressure process kills any harmful pathogens (example: bacteria like E:Coli, Salmonella, Listeria) that might be present thereby increasing food safety.
  • The high pressure process kills the naturally occurring microorganisms like yeasts, molds, and other bacteria that lead to food spoilage thereby lengthening the shelf life.
  • Best of all, high pressure pasteurization does not affect vitamins, minerals, enzymes, chlorophyll, taste, or colour of our juices.
